Latkes

Ingredients

  • 1 lb of Potatoes (about 2)
  • 1 large Onion
  • 2 Eggs
  • ½ cup of flour
  • 2 tsp salt 
  • 1 tsp baking powder
  • ½ tsp pepper
  • Oil for frying

Directions

  1. Grate the potatoes and onions and use a tea towel to squeeze out as much moisture as possible
  2. Put the potato and onion mixture in a bowl. Add the eggs, flour, baking powder, salt, and pepper and mix until all the flour is incorporated. 
  3. Heat about a ¼ cup of oil in a medium pan over medium high heat. When the oil is hot, drop heaping tablespoons of the mixture into the pan cooking in batches. Flatten the mixture into discs using a spatula and flip after 5 minutes. Cook for another 5 minutes and then put the latkes on a plate with a paper towel to soak up the leftover oil. 

Peppermint Hot Chocolate

Ingredients

  • ~⅛ tsp Peppermint Extract
  • Chocolate Syrup
  • Milk
  • Marshmallows
  • Peppermint stick

Directions

  1. Heat the milk in a saucepan or a mug in the microwave. 
  2. Stir in the chocolate syrup and peppermint extract (abt 1/8 tsp) to taste 
  3. Garnish with marshmallows and a peppermint stick (and anything else you’d like!)
